Ingredients

  • 1–2 lb pork tenderloin (diced)
  • 1/2 cup water
  • 2 cans pineapple chunks (reserve the juice)
  • Juice from the 2 cans of pineapple
  • 1/2 cup brown sugar
  • 4 tbsp cornstarch
  • 1/2 cup vinegar
  • 6 tbsp soy sauce
  • 1 tsp salt
  • 2 bell peppers (diced)
  • 2 medium onions (diced)
  • 1 cup rice

Instructions

  1. Heat a large pan over medium-high heat and sauté the diced pork until lightly browned.

  2. Add 1/2 cup of water, reduce heat to low, cover, and let it simmer for about 1 hour until the pork is tender.

  3. While the pork simmers, prepare your rice according to package instructions.

  4. In a bowl, combine pineapple juice, brown sugar, cornstarch, vinegar, soy sauce, and salt. Mix until smooth and set aside.

  5. In a separate pan, cook the diced onions and bell peppers until soft and slightly caramelized.

  6. Add the cooked veggies to the pork. Increase heat to medium-high.

  7. Pour in the sauce mixture and add pineapple chunks. Stir well.

  8. Let everything simmer for a few minutes until the sauce thickens into that classic glossy finish.

  9. Spoon the sweet and sour pork over a bed of rice and dig in.
