  • 1 tablespoon neutral oil
  • 1 teaspoon toasted sesame oil (optional)
  • 4 packs ramen noodles, boiled 3 minutes, shocked in ice bath
  • Sliced green onions
  • Toasted sesame seeds
  • 1 tablespoon cornstarch mixed with 1 tablespoon cold water (slurry)

Instructions

  1. Mix the sauce: In a bowl, whisk soy sauce, honey, hot sauce, ginger, and garlic until smooth.

  2. Season the chicken: Sprinkle strips with salt and pepper.

  3. Brown it up: Heat neutral oil in a skillet over medium-high. Add chicken and sear 2–3 minutes per side until golden.

  4. Sauce time: Pour in the sauce, tossing chicken to coat. Reduce heat to medium and simmer 7–9 minutes, stirring until chicken is cooked through and the sauce reduces.

  5. Thicker sauce option: Stir in cornstarch slurry during the last 2–3 minutes until glossy.

  6. Cook the noodles: While the chicken simmers, bring a medium pot of water to a boil. Add ramen bricks and cook for 3 minutes until just tender. Drain immediately and shock in an ice bath (bowl of cold water with ice) to stop cooking and keep noodles chewy. Drain again.

  7. Noodle toss: Add the cooled ramen to the skillet, tossing until glossy noodles and chicken are coated in sauce.

  8. Finish strong: Stir in sesame oil if using. Garnish with sesame seeds and green onions.
