  • 2 spring onions, thinly sliced
  • 200 g marble cheese, shredded (about 2 cups)
  • 4 big handfuls tortilla chips, lightly crushed for bite (hello crunchy tortilla chips)
  • Russian dressing, a few good squeezes (about 3–4 Tbsp)
  • Sour cream, 6 heaping spoonfuls (about ½ cup)
  • Salsa, 4 heaping spoonfuls (about ⅓ cup)
  • Sliced jalapeños or hot sauce, diced avocado, corn, black beans, lime wedges, extra salsa, Greek yogurt swap

Instructions

  1. Brown the beef. Heat a large skillet over medium-high. Cook ground beef, breaking it up, until no pink remains. Drain excess fat (or blot with paper towel).

  2. Season. Stir in taco seasoning. For a saucier finish, add ¼ cup water and simmer 1–2 minutes until slightly thickened.

  3. Mix the dressing. In a small bowl, stir together Russian dressing, sour cream, and salsa until smooth—this is your creamy taco salad dressing.

  4. Build the bowls. Divide lettuce, tomatoes, spring onions, cheese, and chips among 2–4 bowls. Spoon hot beef over top.

  5. Dress & toss. Drizzle each bowl with 2–3 Tbsp dressing (or to taste). Toss just before eating so the chips stay crisp.
