  • 1 1/2 lb baby potatoes, halved
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • 1–2 tbsp Parmesan cheese
  • Salt and black pepper

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.

  2. In a bowl, toss halved baby potatoes with olive oil, garlic powder, rosemary, thyme, Parmesan, salt, and pepper. Spread out on the baking sheet.

  3. Roast for 25–30 minutes, flipping halfway, until golden and crispy.

  4. While potatoes roast, season chicken with salt, pepper, and garlic powder.

  5. Heat olive oil in a large skillet over medium-high heat. Sear chicken 4–5 minutes per side until golden and cooked through. Remove and set aside.

  6. Lower heat to medium, add minced garlic, and sauté 1 minute.

  7. Stir in chicken broth, scraping up browned bits, and let simmer 2–3 minutes.

  8. Pour in cream, Parmesan, Dijon, Italian seasoning, and chili flakes. Simmer 5 minutes, stirring until smooth and slightly thickened.

  9. Return chicken to skillet, spoon sauce over the top, and simmer another 2–3 minutes.

  10. Serve chicken family style with roasted baby potatoes, garnished with parsley if you like.
