So apparently this is the best thing in the history of mankind according to a Michelin star chef. If you’ve already seen it floating around, then yup, it’s that viral Microwave Omelette by Chef José Andrés. I spotted it on TikTok and had to bring it here to my Kitchen Journal because, honestly, how could I not? A one-minute omelette with only a handful of ingredients and the José Andrés stamp of approval? Yeah, I’m intrigued.

I haven’t tested it yet myself, but it’s bookmarked for the next lazy morning when I want something warm, fluffy, and ridiculously easy. It feels like one of those recipes that straddles the line between genius hack and guilty pleasure. Just egg, mayo, and butter doing all the heavy lifting, and then you finish it with a snow shower of parmesan. Comfort food minimalism at its finest.

Microwave Omelette by Michelin Star Chef José Andrés
Ingredients
1 egg
1 tbsp full-fat mayo
1 tsp salted butter
Parmesan cheese, for garnish
Directions
1. Whip the egg together with the mayo until smooth.
2. Grease a ramekin with the butter, leaving the leftover bit of butter sitting at the bottom.
3. Pour in the egg mixture.
4. Microwave for 40 seconds.
5. Carefully remove, plate, and top with grated parmesan.
That’s it. Five ingredients, one ramekin, less than a minute of cooking.
