When the craving hits, you just roll with it
Sometimes lunch cravings come out of nowhere and feel oddly specific. Today mine was all about something savory, almost like an egg foo young vibe but not quite. I was wandering around the kitchen, poking through the freezer and fridge, trying to figure out what could scratch that itch without a grocery run.
I pulled out a bag of frozen stir-fry veggies, the 3 pepper and onion mix I always forget I have. Five eggs, a splash of milk, a little shredded marble cheese hanging out in a bag, and the usual lineup of soy, hoisin, and sriracha. Salt, pepper, done. That’s all it took to spark an idea.
It turned into a Spicy Market-Style Egg Pancake, hot, fluffy, veggie-packed, cheesy, with just enough sauce and heat to make it exciting. Right at the end, I couldn’t resist a spoonful of chili crisps on top, and that little crunchy, spicy kick sealed the deal.
Honestly? It was exactly what I needed. That strange craving got satisfied and then some. I’ll be posting the full recipe soon, but for now just know that eggs, veggies, cheese, sauce, and chili crisp can be pure magic if you’re willing to wing it.
